Elvis Bars

Almost like a frosted banana bread, these bars are reminiscent of Elvis’s food loves – peanut butter and banana!

Elvis Bars

Bars:

3 small, ripe bananas
½ cup (1 stick) butter, room temperature
½ cup light brown sugar
½ cup all-purpose flour
½ cup oats, regular
2 T flaxseed, ground
1 egg
1 tsp vanilla
1 tsp cinnamon
½ tsp baking soda
Pinch salt

 

Icing:

½ cup peanut butter, regular or natural
½ cup confectioner’s sugar

Preheat oven to 350 degrees

Beat bananas with an electric mixer until liquefied. Add all the remaining bar ingredients and mix until combined. Pour into a greased 9 x 9 inch baking dish and bake at 350 degrees for 25-30 minutes or until set. Cool slightly.

For the icing place the peanut butter into a small bowl and microwave at high for about 30 seconds or until melted. Add the confectioner’s sugar and stir until blended. Spread over the bars and let cool completely before cutting. Store in the refrigerator.

Modifications:
Substitute whole wheat flour for some or all of the all-purpose flour for a higher fiber content.
