Ginger Lime Peanuts

Super simple to make but so full of flavor! Add more ginger if you would like a “spicier” taste. Watch the peanuts carefully as they toast in the skillet, they can brown quickly! You can use unsalted, roasted peanuts and simply heat them in the skillet a few minutes with the ginger to absorb the flavor and then toss with the lime zest and salt.

1 Tbsp olive oil
2 cups raw, blanched peanuts
1 Tbsp ginger, finely chopped or crushed (I like to use the crushed ginger in a tube, can typically find it in the produce section near the packaged herbs)
Zest of one lime
Salt, to taste

Heat olive oil in a skillet over medium heat. Add peanuts and ginger and cook for about 10 minutes or until browned and fragrant, stirring often. Watch closely as the peanuts can brown quickly! Remove from heat and add lime zest and salt to taste. Transfer to cookie sheet lined with wax paper to cool completely.
