Dark Chocolate, Cherry and Pistachio Cups
An easy Valentine's Day (or any day!) treat!
Forget about boxed candy, these delectable treats are quick, easy and guaranteed not to leave half-eaten candy pieces inside the box! Filled with chewy cherries, crunchy pistachios and topped with just a sprinkle of sea salt (pink, of course!), they are a perfect bite of indulgence!

I used pink Himalayan sea salt on top but any course-ground salt would work. But the pink is so pretty!
I keep these in the refrigerator and let them sit out for just a few minutes to get to room temperature before eating.
Dark Chocolate, Cherry and Pistachio Cups
Ingredients:
- 1 cup dark chocolate chips (I used Ghiradelli)
- 1 Tbsp coconut oil
- 1/4 cup dried cherries
- 3 Tbsp pistachios, coarsely chopped
- Sea salt, to sprinkle on top (preferably pink :))
- Muffin/cupcake paper liners
Line a 12-cup muffin tin with paper liners.
Pour chocolate chips and coconut oil into a medium-size microwave safe bowl. Microwave on high for 30 seconds. Stir and microwave in 20 second increments until melted. Stir in dried cherries and pistachios.
Pour/spoon chocolate mixture into lined muffin cups. Sprinkle each cup with a few grains of course-ground sea salt. Chill for at least 15 minutes or until set. Store, covered, in the refrigerator.
