Yogurt Parfait with Graham Crumble
Honestly, it's all about the crumble!
I eat yogurt almost every day - on its own, topped with fruit, in a smoothie, a dip (Buffalo Hummus), salad (Spicy Egg Salad), or in desserts such as Cannoli Cream with Strawberries and Pistachios or Strawberries and Yogurt Bars. We always have a couple of large containers of yogurt in the refrigerator. A quick weeknight meal is often nachos with ground turkey taco meat and toppings including plain Greek yogurt in place of sour cream.
Another food I eat almost every day is graham crackers. I could honestly eat a whole pack at a time but I try and limit myself to 1-2 "sheets"! If I'm wanting a more substantial snack I'll spread peanut butter on a half, top with the other graham cracker half and then dunk it in milk - yum!!
I've been buying a lot of fresh fruit lately to take advantage of 1) the flavor - fresh in season fruit can't be beat! and 2) the price - seasonal fruit is typically lower in price than out-of season fruit that travels long distances to the store. Just to change up from a typical "yogurt topped with fruit" dessert or snack, I made a topping using my beloved graham crackers, oats and almonds and layered it all in parfait glasses.
I need to find more uses for my parfait glasses. I think they are so pretty and it is really enjoyable to relax and appreciate an attractive dessert! It feels fancy even though it is really quick and easy.
I love the patriotic look of this parfait but really any fruit would work. Again, it is really all about the crumble! It was delicious even mixed into the yogurt and refrigerated overnight. The crumble becomes slightly chewy with little bits of crunch from the nuts. Patrick has been putting it on applesauce for an evening snack. I think it would be tasty on pudding or ice cream too!
Yogurt Parfait with Graham Crumble
Ingredients:
- 3 cups vanilla nonfat or lowfat Greek yogurt
- 1 cup blueberries
- 1 cup raspberries
Graham Crumble:
- 3 sheets graham crackers, crumbled (about 1/3 cup)
- 2 Tbsp butter
- 1 Tbsp brown sugar
- ¼ cup regular oats
- ¼ cup sliced or slivered almonds
- ½ tsp cinnamon
- Dash of salt
Make the Graham Crumble:
Melt the butter over medium heat in a large skillet. Add the remaining ingredients and stir to coat. Cook for 5-10 minutes over medium heat until almonds and oats have started to brown, stirring occasionally. Remove from heat and allow to cool.
Assemble the parfaits:
Add a layer of raspberries to the bottom of 6 parfait glasses. Top with ¼ cup of yogurt. Add a layer of blueberries and top with another ¼ cup yogurt. Top parfaits with graham crumble.
Serves 6
Modifications:
Use other fruits in place of raspberries and blueberries.
Try sprinkling the graham crumble on applesauce, pudding or ice cream.
