Chunky Monkey Overnight Oats

With a little prep work the night before, these overnight oats are a quick and easy breakfast that has it all!

Packed with fiber from the oats, energy from the banana, protein from the milk, yogurt and peanut butter and an antioxidant punch from the cacoa nibs, it will keep you full and satisfied for hours.


Chunky Monkey Overnight Oats

 

Ingredients:

1 cup oats, old fashioned or steel cut
¾ cup to 1 cup milk (cow, soy or nut), depending on how thick you prefer
½ cup Greek yogurt
2 Tbsp peanut butter
¼ tsp vanilla
1 banana, sliced
1 Tbsp cacao nibs
Honey, optional, to drizzle over the top

In a small bowl mix together the milk, yogurt, peanut butter and vanilla. Divide the oats between 2 containers with a lid. Pour the peanut butter mixture over the oats and stir to combine. Cover and refrigerate overnight. Before serving, top with sliced banana, cacao nibs and a drizzle of honey if desired.
